“One citrus fruit, the Pomelo (Pompelmo in Italian), was missing to make this trip to Italy smell good. Known wrongly as grapefruit (UVA in Italian), it originates in Asia where it is revered and serves as an offering to the Gods. It appeared in Seville in Spain around the 12th, 13th century as most citrus fruits and during the Arab domination which are excellent travelers.
If it is the biggest of citrus fruits, I like Pomelo for its bitterness; bitter is part of the intelligent smells for me, unlike sweet, which I find easy and uninteresting. Perhaps because of my Italian background, bitterness in Italy is celebrated in many drinks. Here I worked not only on the lively and acidic freshness of the Pomelo, but also on the bitterness to distinguish it, to make it unique.” Jean-Claude Ellena
