"There was a citrus fruit missing, the Pomelo (Pompelmo in Italian), to end this trip to Italy in a scent. Wrongly called grapefruit (UVA in Italian), it is native to Asia where it is venerated and serves as offerings to the Gods. It appeared in Seville in Spain around the 12th, 13th century like most citrus fruits and during the Arab domination who are excellent travelers.
If it is the largest of citrus fruits, I like the Pomelo for its bitterness; bitterness is one of the intelligent smells for me unlike sweetness which I find easy and uninteresting. Perhaps because of my Italian background where bitterness in Italy is celebrated in many drinks. Here I worked not only on the lively and acidic freshness specific to the Pomelo, but also accentuated the bitterness to distinguish it, to make it unique." Jean-Claude Ellena
